Fresh Guacamole

This is a rip-off of the guacamole served at Charritos Restaurant in Hoboken, New Jersey.  It is the best guacamole I or anyone I know has ever experienced.  It is the reason I own a granite mortar and pestle.

Ingredients:
2 Haas avocados
1/2 cup fresh cilantro, rinsed and chopped without stems
1/4 cup Spanish yellow onion, chopped
1/2 lime
1 tsp. jalapeno, chopped
salt to taste

Directions:
Combine chopped onion, jalapeno, cilantro, a pinch of salt, and the juice of half the lime.  Grind/smash up the ingredients.  If you have them, a heavy mortar and pestle are ideal for releasing the juices from the ingredients. If not, a sturdy bowl and fork are passable substitutes.
Peel the avocados, remove the pits, and roughly chop the avocado. Add the avocado to the other ingredients.
Mash up the avocado and mix together all of the ingredients. Add salt to taste.
Serve immediately at room temperature.
