This week I want to make healthy meals while using up things I have on hand, which means using up a bag of organic russet potatoes. This also means my meals might take more prep time than on weeks when I'm not willing to bother. I'm currently baking up most of those russet potatoes now -- all the ones I don't need for the biryani.
Vegetable Biryani and Vegan Cream of Broccoli Soup
I'm doing these dishes tonight because the biryani requires a little time/effort, which I can spare because it's Sunday, and I need the soup for the rest of the week since it's practically the only cruciferous veg Sim will eat.
Vegan Pad Thai
Because I have some brown rice noodles I'd like to use up.
Twice Baked Broccoli & Cheeze Potatoes
To use up all those russet potatoes.
Tofu Scramble
Breakfast burritos just sound good, and I have lots of tortillas in the fridge.
Vegan Shepherd's Pie
This dish normally takes way too long, but I have boxed instant mashed potatoes I can just mix with water and unsweetened soy milk to make the topping, which will cut down prep time and effort enormously.
Homemade Pizza and Green Salad with Garlic Tahini Dressing
Creamy Roasted Red Pepper Pasta & Black Pepper Chickpeas and Green Salad
I have one box of quinoa elbow pasta in my pantry, and these seems like a good way to get rid of it.
