Meal Planning

Time for meal planning.  I currently have a couple containers of spring greens I've been making into buffalo tofu salads at lunch, over a loaf of bread, some green and red bell pepper, celery, and carrots in the fridge.  And five roma tomatoes on the counter.  Here is what I'm planning to make:


Creole Red Beans & Rice

Tomorrow.  To use up some of the bell pepper.


Classic Vegan Fish Tacos with Pico de Gallo and Red Cabbage Slaw

Tuesday maybe since Sameer won't eat the vegan fish.  This will use up my roma tomatoes and some corn tortillas.  I think I might have some chipotle mayo sauce in the fridge from last time.  Sameer and I will finish off any leftover red cabbage slaw and pico de gallo.


Baked Chili-Garlic Tofu Bowl with Vegetables

I've been wanting to try this for a long time, and I finally got some brown rice maifun noodles.


Plant-Based Spaghetti and Meatballs

From the Delish Loves Disney magazine edition.  I can use up leftover meatballs making vegetarian meatball subs for dinner the next night.

 

French Onion Skillet Lasagna

It's easy and uses up any leftover mushrooms from making the meatballs.

Meal Planning

Mostly I want to use up the things I still have in my fridge.  Meal plans are lasting longer now because Sameer has reinstated his alternate day fasting, and Sim and I tend to eat leftovers or something simple on his fast days.  Here is what I'm making starting today:


Pistachio-Crusted Tofu and Boxed Mashed Potatoes and Seared French Beans with Caper Bagna Cauda and Garlic Sauteed Spinach

I have everything to make this, and it'll use up the last of the dairy milk and spinach and green beans in my fridge.  It'll yield significant leftovers, but I can eat them for lunch and dinner tomorrow.


Vegan Penne alla Vodka

I think I have everything for this too.  It'll use up some bell pepper, zucchini and vegan Italian sausage in my fridge.


Garlicky Vegan Korean Mac 'n Cheese

This will use up the vegan cheddar shreds and roasted garlic in my fridge.  And the broccoli in my freezer.


Creole Red Beans & Rice

This will use up the last of the bell pepper.


Hearty Veggie Hoagies     

Because I can make extra to go in Sim's lunch the next day.
