I like vegetable fried rice, and I've never made it before, and this seemed like a pretty simple recipe.

This recipe calls for something called "seitan quick mix," which according to the ingredient list on Amazon is just vital wheat gluten, whole wheat flour, and flax seed meal, all of which I have on hand. I'm just going to guess at amounts based on the Vegetarian Italian Sausage recipe I like so much, and maybe replace the whole wheat flour with chickpea flour.
