Ingredients
2 tbs chopped onion
1 1/2 cups uncooked rice
2 cups low sodium vegetable broth
1 cup chunky salsa
Directions
- Cook onion in a nonstick skillet over medium heat until tender, about 5 minutes.
- Mix rice into skillet, stirring often until toasted lightly. Stir in broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.
