Meal Planning

Time for weekly meal planning.  Other than some carrots and an avocado, I don't think I have anything in the fridge to use up.  Here is what I'm making:

Tofu Provençal and Asparagus in Balsamic Butter Sauce
I'm going to make this for Valentine's Day dinner along with some kind of starch, such as rice pilaf or potatoes au gratin, and cherry sorbet for dessert.

Veggie Tacos and Red Cabbage Slaw and Spanish Rice and Black Beans

Brinner
Breakfast-for-Dinner will include Tofu Scramble, Green Banana Power Blended Salad, and some pancakes or muffins of some kind.  I have gotten sick of the tofu scramble recipe I formerly used, so I'm hoping to make a slightly spicier one, maybe with some bell peppers like this one.  I always like it better with ground seitan too.

Vegetarian Reubens and Red Lentil & Squash Curry Stew
The stew will use up some more of the spinach I'm buying for the green banana power blended salad.

Junk Food Dinner
Baked Potato Skins and Green Salad with Homemade Ranch Dressing

Black Bean Nacho Pizza and Red Cabbage Slaw
The slaw will use up the remaining cabbage from taco day, and the pizza will use up the black beans from taco day, as well as the scallions bought for baked potato skins.

Layered Eggplant & Zucchini Casserole and Green Salad with Homemade Dressing
I've never tried this recipe before, but it sounds a little like the way I make ratatouille and it is very healthy.  I might do spaghetti marinara as a side too.
