Time for weekly meal planning. I currently have the following items in my fridge to use up: a crown of broccoli, some carrots, a green and a red bell pepper, and an avocado. Here is what I'm planning to make:

I found the sandwich on a list of top vegan sandwiches. The original from the restaurant is described as "stuffed with tomatoes, roasted onions, and vegan poppy seed aioli on ciabatta bread."
