Meal Planning

I didn't make everything on the meal plan for last week, so I have some carry over.

Dum Aloo and Dal Makhani and Brown Basmati Rice

Baked Falafel and Cucumber Dill Dressing

Vegetarian Reuben Sandwiches and Vegan Cream of Broccoli Soup 

Spaghetti & Meatless Balls and Green Salad

Mexican Omelets
I'm not sure if I've posted this one before.  It's a rip-off of something from the menu at French Roast in NYC.  It's just an omelet with tomatoes, guacamole, and Gruyere.  I have a surplus of eggs, tomatoes, and Gruyere right now, so it seemed a logical meal choice.

Meal Planning

This will be our has-to-be-ready-when-we-get-home-from-dance-class meal.  I have tried a few recipes from this cook book and liked zero of them so far, so my hopes aren't high, but by god I will find something the Instant Pot can make that isn't nauseating.  At least this will use some random dry goods I have on hand, like mung beans.

Dum Aloo and Dal Makhani and Brown Basmati Rice
I have so many russet potatoes right now.  Also, I love dum aloo and dal makhani and will eat all the leftovers.

General Tso's Chickpeas and Brown Rice
This has become our go-to meal for Sunday or Monday night.  It's better than most or all stir-fry I've made and, since the only "fake meat" is chickpeas, it's even unprocessed.  I think the raw red onions and sesame seeds sprinkled over the finished product really make the dish, but my family disagrees.  Simran does actually eat the broccoli and chickpeas with a bit of prodding though, so that's nice.  

Twice Baked Broccoli & Cheeze Potatoes and Collard Greens with Almonds
Because I have so many potatoes but also fresh collard greens that didn't fit into last week's chili.

Sameer and I are reducing our weight at the moment, so I'm trying to include my favorite meals that feel heavy and filling but are actually very light calorically.  Based on the other dishes in this list, I think it's the inclusion of beans/dal and a nice sauce that does it.

Enchiladas Verdes and Black Beans
I want to include something with cheese for the weekend, and this will use up some spinach from the fridge/freezer plus the last of the corn tortillas.
