Meal Planning

Time for meal planning.

Enchiritos and Red Cabbage Slaw
Sameer requested we make "enchiritos," by which he means enchiladas filled with refried beans and heated in the microwave.

Seitan & Veggie Stirfry and Brown Rice
I'm not sick of this yet, and it's one of the easiest, healthiest things I know how to make, so we're having it pretty much weekly.

Cheese Pizza and Garden Salad with Homemade Ranch Dressing

Tofu Provençal with Rice Pilaf and French Onion Soup (from frozen)

Tofu Pot Pie

Tofu Po'Boy Sandwiches and Baked Sweet Potato Fries and Vegan Cream of Broccoli Soup

Meal Planning

Time for weekly meal planning.  We ate a frozen pizza one night last week, so I've still got enough to meals for the next two days.  Here's what I'm planning to make:

Veggie Pizza and Garden Salad with Homemade Ranch Dressing

Vegetarian Korma and Brown Basmati Rice

Chilli-Garlic Noodles
This will use up the leftover green cabbage from last week's chilli-garlic noodles, as well as the few remaining carrots in the fridge.

Crispy Breaded Tofu and Winter Squash Mac 'n Cheeze and Peas & Carrots

Seitan & Veggie Stir-fry

Enchiladas Verdes and Red Cabbage Slaw and Slow-Cooker Black Beans
This will use up some of the corn tortillas in the fridge, as well as the remaining red cabbage.

Red Lentil & Squash Curry Stew and TLTs
This is an easy, healthy one that I love.  It will use up some of the spinach I have to buy for the enchiladas verdes.

Meal Planning

Time for weekly meal planning.  I currently have the following items in my fridge to use up:  a crown of broccoli, some carrots, a green and a red bell pepper, and an avocado.  Here is what I'm planning to make:

Red Chile Cheese Enchiladas and Red Cabbage Slaw

Veggie Pizza and Garden Salad with Homemade Ranch Dressing

Veggie Tacos and Red Cabbage Slaw

Chilli-Garlic Noodles
I need to make another batch of milder chile-garlic paste.

Garnet Yam & Avocado Sandwich and Cinnamon Squash Chowder
I found the sandwich on a list of top vegan sandwiches.  The original from the restaurant is described as "stuffed with tomatoes, roasted onions, and vegan poppy seed aioli on ciabatta bread."

Meal Planning

Time for weekly meal planning.  Other than some carrots and an avocado, I don't think I have anything in the fridge to use up.  Here is what I'm making:

Tofu Provençal and Asparagus in Balsamic Butter Sauce
I'm going to make this for Valentine's Day dinner along with some kind of starch, such as rice pilaf or potatoes au gratin, and cherry sorbet for dessert.

Veggie Tacos and Red Cabbage Slaw and Spanish Rice and Black Beans

Brinner
Breakfast-for-Dinner will include Tofu Scramble, Green Banana Power Blended Salad, and some pancakes or muffins of some kind.  I have gotten sick of the tofu scramble recipe I formerly used, so I'm hoping to make a slightly spicier one, maybe with some bell peppers like this one.  I always like it better with ground seitan too.

Vegetarian Reubens and Red Lentil & Squash Curry Stew
The stew will use up some more of the spinach I'm buying for the green banana power blended salad.

Junk Food Dinner
Baked Potato Skins and Green Salad with Homemade Ranch Dressing

Black Bean Nacho Pizza and Red Cabbage Slaw
The slaw will use up the remaining cabbage from taco day, and the pizza will use up the black beans from taco day, as well as the scallions bought for baked potato skins.

Layered Eggplant & Zucchini Casserole and Green Salad with Homemade Dressing
I've never tried this recipe before, but it sounds a little like the way I make ratatouille and it is very healthy.  I might do spaghetti marinara as a side too.
