Hot-and-Sour Cabbage Salad

This recipe comes from Caldwell Esselstyn's Prevent and Reverse Heart Disease. 

Ingredients
1/2 head Napa cabbage, shredded
1 green onion, thinly sliced
1/4 cup seasoned or plain rice vinegar
1 tbs peeled, minced fresh ginger
1 tsp sugar (optional)
1/2 - 3/4 tsp red pepper flakes

Directions

1. Place cabbage and green onion in a large bowl.

2. In a small saucepan, over medium head, bring vinegar, ginger, sugar (optional), and hot pepper flakes to a boil, stirring until sugar dissolves.  Pour hot dressing over cabbage and toss.
