I have one carry over meal from last week. Here's what I have to use up: one red bell pepper, two ripe avocados, a couple small russet potatoes, and a whole mess of corn tortillas. Here is what I'm making:
Thai Red Curry with Tofu & Mushrooms and Brown Rice
Black Bean Burgers with Chipotle Mayo and Garlic Broccoli
Veggie Pizza and Green Salad
Avocado Grilled Enchiladas with Red Chile Pesto and Slow Cooker Black Beans and Mexican Potato Salad
The enchiladas will use up the vegetarian chicken strips in the fridge as well as the remaining avocado. The potato salad will use up the potatoes in the pantry.
